INGREDIENTS

  • 1¾ cups (315 grams) cooked chopped spinach (divided) (drain really well the spinach, wring out with your hands to remove as much excess moisture)
  • ⅓ cup (100 grams) ricotta (I used cow ricotta)
  • ¼ cup (28 grams) freshly grated parmesan cheese
  • ½ teaspoon (3 grams) salt
  • 1 egg
  • 2-3 tablespoons (20-30 grams) shredded mozzarella
