INGREDIENTS

  • ⅔ cup of sugar
  • zest of 1 orange
  • 2 tablespoons of oil
  • ⅓ cup of egg whites
  • 2 cups of flour
  • 1½ teaspoons of baking powder
  • pinch of salt
  • ½ cup of cranberries
  • ½ cup of shelled unsalted pistachios
  • 1 cup of white chocolate chunks/wafers
  • ¼ cup of cranberries + ¼ cup of shelled unsalted pistachios, both minced together in a food processor
